  • 1/2 cup onion finely diced
  • 1 packet taco seasoning
  • 1 1/2 cups red salsa
  • 1 cup sour cream
  • 2 cups shredded cheese cheddar and Monterey Jack
  • 4 cups Doritos chips nacho cheese flavor
  • 1/2 cup tomatoes diced
  • 1/4 cup green onions sliced

Method
 

  1. Preheat the oven to 375 degrees F and coat a 2-3 quart baking dish with cooking spray.

  3. Add the finely diced onion to the pan and cook for 3-4 minutes more, until it becomes translucent.
  4. Stir in the taco seasoning and red salsa, then simmer the mixture for 3-4 minutes.
  5. Remove the pan from heat and stir in the sour cream until combined.
  6. Lightly crush Doritos and spread one-third of them over the bottom of the prepared baking dish.
  7. Layer half of the meat mixture over the chips, followed by one-third of the shredded cheese.
  8. Repeat the layering with another third of the chips, the remaining meat mixture, and another third of the cheese.
  9. Add the final layer of chips, then top with the remaining cheese, and cover the baking dish with foil.
  10. Bake for 30 minutes, then uncover and bake for an additional 10-15 minutes until the cheese is melted and lightly browned.
  11. Sprinkle diced tomatoes and sliced green onions over the hot casserole, then serve with optional taco toppings.

Notes

This casserole is highly customizable; feel free to add black beans, corn, or different vegetables. For a spicier kick, use hot salsa or add a pinch of cayenne pepper to the meat mixture. Serve with your favorite taco toppings like guacamole, jalapeƱos, or extra cilantro.
