- Preheat the oven to 375 degrees F and coat a 2-3 quart baking dish with cooking spray.

- Add the finely diced onion to the pan and cook for 3-4 minutes more, until it becomes translucent.
- Stir in the taco seasoning and red salsa, then simmer the mixture for 3-4 minutes.
- Remove the pan from heat and stir in the sour cream until combined.
- Lightly crush Doritos and spread one-third of them over the bottom of the prepared baking dish.
- Layer half of the meat mixture over the chips, followed by one-third of the shredded cheese.
- Repeat the layering with another third of the chips, the remaining meat mixture, and another third of the cheese.
- Add the final layer of chips, then top with the remaining cheese, and cover the baking dish with foil.
- Bake for 30 minutes, then uncover and bake for an additional 10-15 minutes until the cheese is melted and lightly browned.
- Sprinkle diced tomatoes and sliced green onions over the hot casserole, then serve with optional taco toppings.
Notes
This casserole is highly customizable; feel free to add black beans, corn, or different vegetables. For a spicier kick, use hot salsa or add a pinch of cayenne pepper to the meat mixture. Serve with your favorite taco toppings like guacamole, jalapeƱos, or extra cilantro.
