  • 1/2 cup shoyu
  • 1/3 cup mirin
  • 1/3 cup sake
  • 2 tablespoons sugar
  • 1/2 inch ginger sliced
  • 3 garlic cloves finely minced
  • 1 teaspoon cornstarch
  • 2 teaspoons water
  • 1 pound boneless, skinless chicken thighs cut into 1 inch cubes

Method

  1. Combine shoyu, mirin, sake, sugar, ginger, and garlic in a medium bowl, then reserve ¼ to ½ cup of the mixture for the glaze.
  2. Add the chicken to the remaining teriyaki sauce, cover the bowl, and marinate in the refrigerator for a minimum of 2 hours, or ideally overnight.
  3. Once marination is complete, preheat your air fryer to 380°F.
  4. While the air fryer preheats, make the teriyaki glaze by adding the reserved sauce to a small saucepan over medium heat, then stir in a cornstarch and water slurry until it thickens.
  5. Spray the air fryer basket with non-stick cooking spray and arrange the marinated chicken in a single layer.
  6. Cook the chicken for 6 minutes, then flip, brush with the prepared teriyaki glaze, and continue cooking for another 5-6 minutes or until it reaches an internal temperature of at least 165°F.
  7. Allow the cooked chicken to cool slightly before serving and enjoying your meal.

Notes

For best flavor, marinate the chicken overnight. Adjust glaze thickness to your preference. Serve with rice and steamed vegetables for a complete meal.
